Cheap Paleo Breakfast Casserole
Cheap Paleo Breakfast Casserole
This Paleo Breakfast casserole takes some time, but it is well worth it in my opinion. You will make 4-5
weeks of breakfast so you won’t have to make it again for a month!!
I Ingredients
j 36 eggs $6.30
6 color bell peppers $6.98
6 cups fresh spinach $5.00
1 sweet onion $.65
2 medium sweet potatoes $1.90
Total= $20.83

Wash all vegetables.
Place peppers and onion in a colander in a large bowl to help drain the liquid |
Preheat oven
to 350 degrees.
Line 2 baking pans approx
6”x13” with foil for easy clean up

Crack eggs in a large bowl and mix with an immersion blender. Add cooled vegetables and potatoes and mix with the immersion blender just enough to merry the vegetables and eggs.

Pour equal parts of egg mix
into each pan. Place in oven for 40-50 minutes. Stick a toothpick in the middle
of the casserole to see if it is done-the toothpick should come out clean.

How to Roast Vegetables Cheap
Ingredients:
- Sweet potato 1.11lb=1.32
- Zucchini 1lb= 1.49
- Squash .85lb=1.27
- Sweet onion .62lb=.61
- Cabbage .5lb=.69
- Salt 1.5 tsp
- Pepper 3/4tsp
- Garlic powder1Tbs
- Olive oil 2 Tbs
Total cost:
$5.38= .41 a cup
Preheat oven to 350 degrees. Wash vegetables.
Chop into 1 inch cubes. Line 2-3 baking sheets with foil. Pour a small amount of oil on foil. Place vegetables on foil. Sprinkle spices evenly. Mix the veg/spices with your hands.
Place vegetables in the oven. Cook 35-40 minutes depending on your oven.
I love these roasted veggies for quick dinners, hubby’s
lunch and bite sized snacks for the little one.
