How to Roast Vegetables Cheap

Ingredients:

  • Sweet potato 1.11lb=1.32
  • Zucchini 1lb= 1.49
  • Squash .85lb=1.27
  • Sweet onion .62lb=.61
  • Cabbage .5lb=.69
  • Salt 1.5 tsp
  • Pepper 3/4tsp
  • Garlic powder1Tbs
  • Olive oil 2 Tbs
Total cost:
          $5.38= .41 a cup 
          Makes 13 cups

Preheat oven to 350 degrees. Wash vegetables. 

   Chop into 1 inch cubes. Line 2-3 baking sheets with foil. Pour a small amount of oil on foil. Place vegetables on foil. Sprinkle spices evenly. Mix  the veg/spices with your hands. 

Place vegetables in the oven.  Cook 35-40 minutes depending on your oven.

I love these roasted veggies for quick dinners, hubby’s lunch and bite sized snacks for the little one.
